Edamame Salad

About a week ago my daughter posted an edamame salad on her blog with the recipe. http://aaydensmommy.blogspot.com/ You know how I dislike writing out recipes. I always send my blogger friends a link to fend for themselves. I know, I'm a terrible blogger host. Well maybe not terrible, just lazy perhaps.
Anyway my daughter had that salad recipe posted and I tried it tonight to go along with our dinner and it was really good. I was rather surprised and I'll tell you why. I do like to eat as healthy as I possibly can. Or should I say I try to do the best that I can. It depends on my frame of mind on a particular day I guess. I'm sure we can all relate. Anyhow so I'm always looking for new and healthy foods that I have never tried to add to my list of healthy foods to eat. I like to try new fruits, vegetables etc.
Well I have to say I've never tried nor wanted to try tofu. I don't know, I just can't bring myself to try that. I've always heard of those diet soybean burgers and other edible stuff like milk also made from soybeans. I don't know about you but that tofu does not look appetizing to me in the least. I even went as far as trying those veggie burgers. And well they were OK but I never bought them again. So that's why I kind of strayed away from the soybean food products because tofu just looks icky! Thank goodness my mom didn't make me eat that when I was a kid or I'd be sitting at the table for a very looonnnngggg time (Mom never made me sit at the table till I finished my food, just a figure of speech)!
But my daughter raved about how good edamame was and how she will just eat them for a snack! Yes, a snack. So she peeked my curiosity. So I tried them and they were good. And I would have them again. Maybe even for a snack.
I asked my daughter when she started eating those because I never bought them before when she lived at home. She said a girlfriend got her to try them. I asked her where to find them in the stores and she said in the freezer department. They are by the organic freezer foods. But I couldn't find them shelled like the recipe called for. I had to buy them in there pods in a bag but they were easy to pop out of there pods after you boiled them. Here are a few pics. Again you can go to my daughter's blog and get the whole recipe.
Thank you daughter for broadening my horizons on soybeans. Thanks for the quick and easy salad recipe to. This would be a nice cool salad to have in the summer.
Picture of the bag it came in.

After you boiled them like the directions say, you easily pop the soybeans out of their pods.

You get approximately 1 1/2 cups of soybeans after you shell them.

Combine & add the dressing.
Then I chilled it for about an hour.
It was a very good salad with the fresh ingredients and nice and cool. See I try to be open minded. My daughter is probably going to make fun of me. She's going to tell my secret that I eat garbonzo beans right out of the can. I love those things. Edamame has the same texture as a garbozo bean but it tasted different. My husband thought they looked like lima beans.

I have to agree with you that I just don't like the look of tofu but do love garbonzo beans so I'd probably like these too if fixed in a salad. Not sure about the snacking tho :)

  2. This sounds like something my youngest daughter would like...she's a strict vegetarian, won't even eat marshmallows because they contain gelatin! I'll tell her about this...it looks good. I like your Christmas graphics!

  3. This salad does look good, I would love to try it, I wonder if I can get these here. I haven't seen them - but then I have not looked for them.

In answer to your earlier questions:

This time of the year for us the grass is very green (not a snowflake in site). I must say I am very jelous, it must be wonderful to have a white Christmas. We live in Johannesburg, South Africa (proudly known as the country Mandela comes from). I was born here and have never had the opportunity to leave the country but would love to travel when the children are a little older. The snow I saw as a child was from a freek storm that blew in (by the next day it was all gone), even our winters here are pretty much mild. Have a great day!

  8. Hi Anne...Just a little something to brighten your day. Mom reads my blogs and reads my visitors'

blogs. I'll call her Shadow Dragon! She doesn't have a screen name or blog, she's leary of it. She e-mailed me today and said how much she enjoyed your blog! She then sent me a link to one of your blogger friends' post on lifes' changes. I commented on that blog as well, it hit home with mom. I wish she would at least get a screen name and comment, she'd make lots of friends. Just thought I'd let you know, your blog stood out to her!

I think my computer has a mind of it's own! My sentences are moving around as I'm typing! This may come out looking funky...feel free to delete it if you wish. Still can't follow you?!
