My Favorite Cookie

Hello fellow bloggers! I sure hope you all are having a nice week. I'm on my way to the dentist in a little bit because I chipped my crown last night. No pain though. Bummer because it chipped. But any way, I found these delicious low fat treats made by Quaker. I had a coupon for them so I thought I'd give them a try. I don't like those rice cakes nor do I eat them. But because this had a flavor to it, I'd thought I'd try it and it is very tasty. I forgot how much they were but I'd get them again. There's 2.5 fat grams in nine. But the chips are fairly big. So here's a picture of that.


I'm a firm believer that you have to have balance, lol! So the other day when it was all cold and snowy, I made my favorite cookies, Peanut Butter Blossoms. They are my absolute favorite and I didn't get a chance to make them for Christmas. So here is a picture of them. I know you might even be shocked this time, but I also typed out the recipe because they are so good and as you can see, they turned out perfectly! Man that gooey Hershey's Kiss just melted in my mouth when those cookies came out of the oven. And the bottoms of the cookies were slightly brown. What an irresistible treat on a cold and snowy day!


Ingredients;

1/2 c. shortening
1/2 c. peanut butter
1/2 c. granulated sugar
12 c. packed brown sugar
1 tsp. baking powder
1/8 tsp. baking soda
1 egg
2 tbls. milk
1 tsp. vanilla
1 3/4 c. all-purpose flour
1/4 c. granulated sugar
milk chocolate kisses

Directions

Beat shortening and peanut butter with an electric mixer for 30 seconds. Add the 1/2 c. granulated sugar, brown sugar, baking powder and baking soda. Beat until combined, scraping bowl. Beat in egg, milk and vanilla. Beat in as much flour as you can. Stir in the remaining flour.
Shape dough into 1-inch balls. Roll balls (son does this part) in the 1/4 c. granulated sugar. Place 2 inches apart on ungreased cookie sheet. Bake in a 350 degree oven for 10 to 12 minutes or until edges are firm and bottoms are lightly browned. (I kept my cookies in for 12 min.) While baking my son helps me unwrap the Hershey's Kisses. =) Immediately press a chocolate kiss into each cookie center. Transfer to a wire rack and let cool. Enjoy!
What I really like about these cookies is that you can make them up quickly without having to wait for the butter to soften on the counter. How many times have you decided to make cookies and going along singing a tune until you get to the part where it says add the softened butter!! Ugh! It happens to me a lot. And you don't have to grease your pan either.

  4. Hey mom, Sorry about your tooth, that really sucks! The cookies look delicious! nice job. I like those Quacker snacks too. I actually eat the rice cakes too tho. They aren't that bad with a little peanut butter, or sometimes I just even eat them plain.
